Technique
Expressing citrus oils over the cocktail surface to add aromatic complexity.
Tutorial
- Select a fresh orange with a thick, oily peel
- Use a sharp paring knife or Y-peeler to cut a 2-inch piece of peel
- Trim any excess white pith from the underside
- Hold the peel by its edges, colored side facing down over the drink
- Position it about 2 inches above the cocktail
- Pinch the peel firmly between your thumb and forefinger, bending it to express the oils
- You should see a fine mist of essential oils spray onto the surface of the drink
- Rub the outer edge of the glass with the peel for additional aroma
- Either drop the peel into the drink or discard, depending on your preference
