Orange Peel for Old Fashioned

Technique

Expressing citrus oils over the cocktail surface to add aromatic complexity.

Tutorial

  1. Select a fresh orange with a thick, oily peel
  2. Use a sharp paring knife or Y-peeler to cut a 2-inch piece of peel
  3. Trim any excess white pith from the underside
  4. Hold the peel by its edges, colored side facing down over the drink
  5. Position it about 2 inches above the cocktail
  6. Pinch the peel firmly between your thumb and forefinger, bending it to express the oils
  7. You should see a fine mist of essential oils spray onto the surface of the drink
  8. Rub the outer edge of the glass with the peel for additional aroma
  9. Either drop the peel into the drink or discard, depending on your preference
