Technique
Shaking is essential for cocktails containing citrus juices, as it properly integrates these ingredients with spirits while creating texture and aeration.
Tutorial
- Add 2 oz white rum, ¾ oz fresh lime juice, and ¾ oz simple syrup to a cocktail shaker
- Fill the shaker ¾ full with fresh, hard ice cubes (not crushed ice)
- Secure the top of the shaker firmly
- Hold the shaker with both hands—one on the bottom, one on the top—and shake vigorously from shoulder height
- Shake for 12-15 seconds until the outside of the shaker becomes frosty
- The sound of the ice will change from a loud rattle to a more muffled sound when properly diluted
- Double-strain through a Hawthorne strainer and fine mesh strainer into a chilled coupe glass
