Technique
Aggressive lime muddling to extract oils from the peel and juice from the fruit.
Tutorial
- Cut a whole lime into 8 wedges and place in a rocks glass
- Add 2 teaspoons of granulated sugar directly on the limes
- Using a muddler, press down firmly on the lime wedges
- Use more pressure than with herbs, crushing the limes thoroughly
- The goal is to extract both the juice and the oils from the peels
- Continue muddling until the sugar is mostly dissolved in the lime juice
- The mixture should look pulpy with visible lime oils on the surface
- Add 2 oz cachaça and fill the glass with crushed ice
- Stir thoroughly to integrate all ingredients
